For the Brigadeiros
  • 1 can condensed milk provides sweetness and creaminess
  • 1 cup whipping cream adds richness
  • 1 cup white chocolate chips consider dark chocolate chips for bolder flavor
  • 4 large egg yolks acts as a thickening agent
  • 1 tsp vanilla extract or use a vanilla bean pod for intense flavor
For the Sugar Coating
  • 1 cup granulated sugar (Demerara/Turbinado) used for caramelized topping
  • 1 tbsp butter for greasing hands

Method
 

Preparation Steps
  1. In a medium saucepan, gently mix condensed milk, whipping cream, white chocolate chips, egg yolks, and vanilla extract over medium-high heat until smooth.
  2. Once the mixture begins to boil, reduce the heat to medium-low and stir for about 10 to 12 minutes until it thickens.
  3. Remove from heat and stir vigorously for another minute. Transfer the mixture to a heatproof bowl and let it cool to room temperature.
  4. Once cooled, grease your hands with butter and scoop small portions of the mixture, rolling them into smooth balls.
  5. Roll each brigadeiro ball in the sugar coating until fully coated.
  6. Place the coated brigadeiros in the freezer for at least 30 minutes.
  7. After freezing, use a kitchen torch to carefully caramelize the sugar coating until golden.
