Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 baking dish by greasing it.
  2. In a large mixing bowl, combine shredded turkey, green chiles, half a cup of sour cream, cumin, ancho powder, green onions, cilantro, and cheese. Stir until well mixed.
  3. In a separate bowl, whisk together the remaining sour cream, heavy cream, salsa verde, and a pinch of cumin until smooth.
  4. Microwave the tortillas for about 30 seconds to soften them, making them easier to roll.
  5. Take a tortilla and add one-third cup of turkey filling down the center. Roll tightly and place seam side down in the baking dish. Repeat until all tortillas are filled.
  6. Pour the creamy sauce over the enchiladas and sprinkle the remaining cheese on top.
