Cooking Instructions
  1. Melt 1 tablespoon of butter in a skillet over medium heat. Season the shrimp with salt and pepper, add to skillet, and cook for 2 minutes per side until pink and opaque. Remove shrimp and set aside.
  2. In the same skillet, melt the remaining tablespoon of butter. Add sliced zucchini and roasted peppers, cooking for 5-6 minutes until tender-crisp. Add minced garlic and Cajun seasoning, stirring for another 30 seconds.
  3. Pour in white wine or chicken broth, deglazing the pan for 1-2 minutes. Stir in heavy cream or coconut milk, letting it simmer for 3-4 minutes until thickened.
  4. Return the shrimp to the skillet, coating well with the creamy sauce. Simmer for another 2 minutes on low heat.
  5. Season with salt and pepper to taste, garnish with fresh herbs, and serve immediately.
