Ingredients
  

For the Bars
  • 3 large Eggs room temperature
  • 1.67 cups Sugar can substitute with brown sugar
  • 1 cup Vegetable Oil can substitute with melted butter
  • 1.75 cups Pumpkin Puree canned or homemade
  • 1 teaspoon Vanilla Extract do not substitute
  • 2 cups All-Purpose Flour can substitute half with whole wheat flour
  • 2 teaspoons Baking Powder ensure freshness
  • 1 teaspoon Baking Soda
  • 2 teaspoons Ground Cinnamon can substitute with pumpkin pie spice
  • 0.25 teaspoon Ground Nutmeg freshly grated preferred
  • 0.25 teaspoon Ground Ginger freshly grated preferred
For the Cream Cheese Swirl
  • 16 oz Cream Cheese softened
  • 1.5 tablespoons Cornstarch optional
  • Additional Sugar to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease the jelly roll pan.
  2. In a large mixing bowl, combine eggs and sugar, then mix until smooth.
  3. Add in vegetable oil, pumpkin puree, and vanilla extract; mix until velvety.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and ginger.
  5. Gently combine the dry mixture with the wet mixture until just incorporated.
  6. In another bowl, mix cream cheese, sugar, and cornstarch until smooth.
  7. Pour pumpkin batter into the pan; drizzle cream cheese mixture over it and swirl gently.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool completely in the pan on a wire rack before slicing.
