Preparation and Baking
- Preheat your oven to 400°F (200°C). Wash and dry the potatoes, then pierce each several times with a fork.
- Place the potatoes directly on the oven rack and bake for 45 minutes or until tender.
- While the potatoes are baking, heat the heavy cream and butter in a saucepan over low heat until the butter is melted.
- Once melted, stir in the grated cheese until smooth and creamy. Season with salt and pepper.
- When the potatoes are done, slice them open and pour the creamy cheese mixture over them.
- Garnish with chopped chives before serving.
