  • 4 medium Potatoes russet or yukon gold recommended
  • 1 cup Heavy cream or half-and-half
  • 1 cup Grated cheese cheddar or your choice
  • 2 tablespoons Butter for richness
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper freshly ground
  • 2 tablespoons Chives for garnish

Preparation and Baking
  1. Preheat your oven to 400°F (200°C). Wash and dry the potatoes, then pierce each several times with a fork.
  2. Place the potatoes directly on the oven rack and bake for 45 minutes or until tender.
  3. While the potatoes are baking, heat the heavy cream and butter in a saucepan over low heat until the butter is melted.
  4. Once melted, stir in the grated cheese until smooth and creamy. Season with salt and pepper.
  5. When the potatoes are done, slice them open and pour the creamy cheese mixture over them.
  6. Garnish with chopped chives before serving.
