  • 2 cups fresh spinach or kale
  • 1 cup heavy cream or Greek yogurt for lighter
  • ½ cup sour cream or plain yogurt
  • 1 teaspoon dried dill or fresh dill

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 diced onion and sauté for about 3-4 minutes until soft.
  2. Add 12 ounces of sliced turkey sausage to the skillet, stirring frequently. Cook for 5-7 minutes until nicely browned.
  3. Stir in 2 minced garlic cloves and cook for about 1 minute until fragrant.
  4. Toss in 16 ounces of frozen pierogi and cook for 5-7 minutes, stirring occasionally.
  5. Add 2 cups of fresh spinach and stir until wilted, about 2 minutes.
  6. Pour in 1 cup of heavy cream and ½ cup of sour cream, mixing thoroughly. Add 1 teaspoon of dried dill, salt, and pepper to taste. Simmer for 3-4 minutes.
  7. Optional: Stir in ½ cup of grated Parmesan cheese until melted, remove from heat.
