- Prepare Potatoes: Wash and cut the baby potatoes into halves or quarters. Boil in salted water for 8–10 minutes until fork-tender, then drain and set aside.
- Season Cod: Pat cod dry, season with salt, pepper, lemon juice, and zest. Let marinate for 5 minutes.
- Sear Cod: Heat olive oil and butter in a skillet. Sear cod for 3–4 minutes per side until golden brown. Remove and keep warm.
- Sauté Aromatics: In the same skillet, add garlic and shallots, sauté for 2–3 minutes, and add rosemary. Cook for an additional minute.
- Add Broth and Cream: Add broth and simmer for 2 minutes. Stir in cream and Dijon mustard, and simmer for 6–8 minutes until thickened.
- Add Potatoes: Toss boiled potatoes gently in the sauce for 3–4 minutes until warmed through.
- Return Cod: Place cod back in the skillet, spooning sauce over it. Simmer for 2–3 minutes.
- Finish and Serve: Garnish with parsley or chives and serve hot.
