  • 1 tablespoon Lemon juice
  • 1 teaspoon Lemon zest
For the Potatoes
  • 1 pound Baby potatoes/Yukon Gold potatoes
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
For the Aromatics
  • 3 cloves Garlic minced
  • 1 medium Shallot chopped finely
  • 2 stems Fresh rosemary or dried if needed
For the Sauce
  • 1 cup Heavy cream
  • 1 cup Halal-certified chicken or vegetable broth
  • 1 tablespoon Dijon mustard optional
For Garnish
  • 2 tablespoons Fresh parsley or chives optional

Method
 

Step-by-Step Instructions
  1. Prepare Potatoes: Wash and cut the baby potatoes into halves or quarters. Boil in salted water for 8–10 minutes until fork-tender, then drain and set aside.
  2. Season Cod: Pat cod dry, season with salt, pepper, lemon juice, and zest. Let marinate for 5 minutes.
  3. Sear Cod: Heat olive oil and butter in a skillet. Sear cod for 3–4 minutes per side until golden brown. Remove and keep warm.
  4. Sauté Aromatics: In the same skillet, add garlic and shallots, sauté for 2–3 minutes, and add rosemary. Cook for an additional minute.
  5. Add Broth and Cream: Add broth and simmer for 2 minutes. Stir in cream and Dijon mustard, and simmer for 6–8 minutes until thickened.
  6. Add Potatoes: Toss boiled potatoes gently in the sauce for 3–4 minutes until warmed through.
  7. Return Cod: Place cod back in the skillet, spooning sauce over it. Simmer for 2–3 minutes.
  8. Finish and Serve: Garnish with parsley or chives and serve hot.
