  • 1/2 whole lemon juice Can substitute with lime juice

Method
 

Step-by-Step Instructions
  1. Hull and chop about 1 cup of fresh strawberries. Rinse them under cool water to remove any dirt, and pat dry. Set aside.
  2. In a blender, combine the strawberries, 1 cup of coconut milk, 1/2 cup of water, 2 tablespoons of maple syrup, and the juice of half a lemon. Blend on high for 30-60 seconds until smooth.
  3. Strain the mixture through a fine mesh sieve into a bowl or pitcher if you desire a smoother texture.
  4. Pour the mixture into jars or glasses and chill in the refrigerator for 30 minutes, or serve over ice.
  5. Garnish with fresh strawberry slices and a sprig of mint before serving.
