Ingredients
  

For the Salad
  • 1 can Chickpeas canned organic for convenience
  • 1 cup Quinoa rinsed before cooking
  • 1 small Red onion optional for sensitivity
  • 2 cups Baby rocket (arugula) spinach can be substituted
  • 1 cup Cherry tomatoes diced
  • 1 half Lebanese cucumber seeds removed
  • ½ cup Greek feta or dairy-free alternative
For the Dressing
  • ¾ cup Hummus store-bought or homemade
  • 1 tablespoon Olive oil high-quality extra virgin
  • 1 tablespoon Balsamic vinegar or red wine vinegar
  • 1 unit Lemon juice freshly squeezed recommended
  • ½ teaspoon Smoked paprika substitute with classic paprika
  • to taste Sea salt & pepper adjust to preference

Method
 

Step-by-Step Instructions
  1. Rinse quinoa under cold water, combine with water and salt in a saucepan, bring to boil, reduce heat and simmer for 15 minutes. Let cool.
  2. Drain and rinse chickpeas, combine with diced red onion, olive oil, and balsamic vinegar in a bowl and toss together. Marinate for 30 minutes.
  3. Wash and dry baby rocket, dice cherry tomatoes and cucumber, add to a bowl with rocket, followed by crumbled feta.
  4. Whisk together hummus, olive oil, lemon juice, sea salt, and pepper in a separate bowl until smooth.
  5. Combine cooled quinoa with chickpeas and vegetables, drizzle with dressing, and toss gently to combine before serving.
