Method
 

Preparation
  1. Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. In a small bowl, combine softened butter, minced garlic, and chopped parsley to create garlic butter.
  3. Slice sweet potatoes in half lengthwise and coat cut sides with garlic butter. Sprinkle with salt and pepper.
  4. Place sweet potato halves cut-side down on baking sheet and roast for about 20-30 minutes, until golden.
  5. Once roasted, flip each potato half cut-side up and top with mozzarella and parmesan cheese.
  6. Switch to broil and cook for about 2 minutes until cheese is melted and bubbly.
  7. Let cool slightly before serving, and garnish with a pinch of salt and cracked pepper.
