Preparation
- Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
- In a small bowl, combine softened butter, minced garlic, and chopped parsley to create garlic butter.
- Slice sweet potatoes in half lengthwise and coat cut sides with garlic butter. Sprinkle with salt and pepper.
- Place sweet potato halves cut-side down on baking sheet and roast for about 20-30 minutes, until golden.
- Once roasted, flip each potato half cut-side up and top with mozzarella and parmesan cheese.
- Switch to broil and cook for about 2 minutes until cheese is melted and bubbly.
- Let cool slightly before serving, and garnish with a pinch of salt and cracked pepper.
