  • 4 tablespoons unsalted butter softened
  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
Fruit
  • 1 cup blueberries
  • 1 cup strawberries diced
  • 1 cup raspberries reserve some for later use
  • 1 cup peaches diced
  • 1 cup kiwi diced
Wraps
  • 4 pieces tortillas
Coating
  • 2 tablespoons melted butter
  • 1/4 cup cinnamon sugar

Method
 

Prepare Filling

Incorporate Fruits
  1. Gently fold in the whipped cream and diced fresh fruits. Reserve some raspberries for later use.
Chill Mixture
  1. Transfer the filling to a covered bowl and chill in the refrigerator for 30 minutes.
Assemble Roll Ups
  1. Spread a layer of the chilled cheesecake filling on a tortilla, sprinkle with reserved raspberries, and roll tightly.
Coat Roll Ups
  1. Brush each roll-up with melted butter and roll in cinnamon sugar until thoroughly covered.
Slice & Serve
