Ingredients

For the Mushrooms
  • 8 ounces White or Cremini Mushrooms Any mushroom variety can work including button or portobello.
  • 1 teaspoon Kosher Salt If using table salt, reduce the amount by half.
  • 1/2 teaspoon Freshly Ground Black Pepper Freshly ground provides the best flavor.
  • 1 teaspoon Fresh Rosemary or Thyme Dried herbs can be used in smaller quantities (1/2 teaspoon).
For the Sauce
  • 1/4 cup Balsamic Vinegar Regular balsamic works fine.
  • 1 tablespoon Light Brown Sugar Honey or maple syrup can be substituted.
  • 1 tablespoon Tamari or Soy Sauce Coconut aminos can replace for soy-free option.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large frying pan over high heat until shimmering, about 1-2 minutes.
  2. Add 1 finely chopped shallot and sauté for 1.5 to 2.5 minutes until softened and golden brown.
  3. Melt 2 tablespoons of unsalted butter in the pan and stir to combine.
  4. Add 8 ounces of sliced mushrooms, 1 teaspoon of kosher salt, 1/2 teaspoon of black pepper, and 1 teaspoon of chopped herbs. Sauté for 3-4 minutes.
  5. Reduce heat to medium-low, add 1/4 cup of balsamic vinegar, 1 tablespoon of brown sugar, 1 tablespoon of soy sauce, and 2 minced garlic cloves. Cook for 6-8 minutes.
  6. Stir in the remaining 2 tablespoons of butter until melted and glossy, coat the mushrooms well.
