- Heat 2 tablespoons of olive oil in a large frying pan over high heat until shimmering, about 1-2 minutes.
- Add 1 finely chopped shallot and sauté for 1.5 to 2.5 minutes until softened and golden brown.
- Melt 2 tablespoons of unsalted butter in the pan and stir to combine.
- Add 8 ounces of sliced mushrooms, 1 teaspoon of kosher salt, 1/2 teaspoon of black pepper, and 1 teaspoon of chopped herbs. Sauté for 3-4 minutes.
- Reduce heat to medium-low, add 1/4 cup of balsamic vinegar, 1 tablespoon of brown sugar, 1 tablespoon of soy sauce, and 2 minced garlic cloves. Cook for 6-8 minutes.
- Stir in the remaining 2 tablespoons of butter until melted and glossy, coat the mushrooms well.
