- In a small pot over low-medium heat, combine fresh blackberries, granulated sugar, and lemon juice. Mash the blackberries until a sauce starts to form (3-5 minutes).
- Increase heat to medium-high and simmer until jam thickens (5-7 minutes). Let cool completely.
- Butter one side of each slice of bread. Place two slices, butter-side down, and spread 1 tablespoon of jam on each. Layer with brie and bacon, and sprinkle chili flakes if desired.
- Top each sandwich with another slice of bread, butter-side up. Press gently. Repeat with remaining ingredients.
- Heat the pan to medium and fry sandwiches for 3-4 minutes on each side until golden brown. Flip when the bread is golden and brie starts to melt.
- Slice sandwiches in half and serve immediately.
