  • 200 g Lotus Biscoff Spread Alternative could be cookie butter
  • 250 g Mini Marshmallows Use for quicker melting
  • 200 g Rice Krispies Any puffed rice cereal can be used
For the Topping
  • 150 g White Chocolate Can substitute with milk or dark chocolate
  • Lotus Biscoff Biscuits Any crunchy biscuit can be used

Method
 

Preparation Steps
  1. Line a 20cm (8-inch) square tin with baking paper.
  2. Combine butter, Biscoff spread, and marshmallows in a microwave-safe bowl.
  3. Heat in the microwave in 30-second intervals, stirring in between for a smooth mixture.
  4. Once smooth, fold in the Rice Krispies until well coated.
  5. Transfer the mixture into the prepared tin and pack down evenly.
  6. Melt the white chocolate in a microwave-safe bowl.
  7. Pour and spread the melted chocolate over the packed mixture.
  8. Crush the Biscoff biscuits and sprinkle over the chocolate.
  9. Chill the tin in the refrigerator for about 30 minutes or until firm.
  10. Slice into squares and enjoy!
