Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. Cream together butter and brown sugar until fluffy.
  4. Mix in egg, cider, and vanilla until smooth.
  5. Gradually add dry ingredients to wet ingredients until just combined.
  6. Scoop dough onto baking sheets, leaving space between each.
  7. Bake for 12-15 minutes until edges are golden.
  8. Cool cookies for 5 minutes before transferring to a wire rack.
  9. For caramel, melt butter, stir in brown sugar and cream, boil then add vanilla.
  10. Once cookies are cooled, spread caramel on one cookie and top with another.
